Had a cracking steak last night. I cut some potatoes into wedges toss them in olive oil, smoked paprika, cumin, oregano, salt and pepper. I sling them in the oven for about 20 minutes after which I flip them. I roast them for ten more minutes then turn the oven off whilst I cook the steaks.
I put a frying pan on full blast until it’s smoking. Cut some fat from the steak - put it them in the pan and watch it sizzle and release all its juices. This is what the steaks are cooked in. I fry the steaks then leave them to rest, de-glaze the pan with some sherry vinegar, then add the wedges and toss them so they get coated in all that lovely flavour! Also I made a Mojo Verde whilst the wedges were cooking.
Nice with a bottle of red.
