Fruity yoghurt cake recipe with raspberries, blueberries and pear
Another easy recipe for delicious cake with raspberries, blueberries and pear. Perfect for afternoon tea or coffee.
I have been baking a lot recently, especially during weekends when have more time and I want to spend that moment with loved ones.
Last time I baked a similar cake with peaches and Greek yoghurt 👇
Today I baked cake with yoghurt again, however I used natural yoghurt which I always have in my fridge (because it's universal and you can always create something tasty from that), and also added more fruits. I took a chance on raspberries, blueberries and pears. The cake turned out very tasty, fluffy, not too sweet. Just perfect for afternoon tea or coffee. What's more, it's fast to prepare and there is no option that cake would be a failure. So let's jump to the recipe!
INGREDIENTS:
Flour (500g)
Vanilla pudding powder (40g)
Natural yoghurt (400g)
Eggs (x3)
Sugar (160g - 200g)
Oil (160ml)
Baking powder (x2 teaspoons)
Raspberries (125g)
Blueberries (125g)
Pear (x1)
METHOD:
1. Wash blueberries, raspberries and pear. Dry them gently with paper towel, peel pear and cut into cubes. Set aside for a moment.
2. Mix sugar, oil, eggs, natural yoghurt, flour, vanilla pudding powder, baking powder till ingredients are thick and well combined (to speed up this process you may use a spoon or mixer) 👇
3. When everything is ready, put the mixture into a mould lined with baking paper. Put raspberries, blueberries and cubed pear on the top. 👇
4. Bake at 180°C for 35-45 minutes. Cool cake down after baking and then sprinkle it with icing sugar. 👇
