Does anything beat food on a stick? Not when it comes to these succulent chicken skewers, flame cooked to perfection in a cast iron pan in your Ooni pizza oven. Herby, garlicky, and all-round lipsmackingly delicious, these skewers are made for lazy days and hot barbecue feasts.

We'd recommend serving them with the courgette fritters, or cooking them up with some smoky roast vegetables – a Mediterranean medley works particularly well – and finishing them off with some sweet chilli sauce. Or perhaps going the whole garlicky hog and serving them up with a garlic yoghurt or tzatziki.

Ingredients

  • 450g (16oz) chicken, diced
  • 1 tbsp rice vinegar
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Small bunch parsley, finely chopped
  • 1tsp dried oregano
  • 3-4 cloves garlic, chopped
  • Zest of one lemon
  • Salt & pepper, to season

Instructions

  1. Place the chicken in a large bowl. Add all the remaining ingredients and mix well. Place the seasoned chicken in the refrigerator, ideally overnight for optimum flavour, or for 30 minutes to marinate.
  2. Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
  3. With a drizzle of olive oil, preheat your cast iron pan in the oven for 1 minute.
  4. Thread the chicken pieces onto a skewer (roughly 4-5 pieces of chicken per skewer), and lay each skewer on the warmed pan. Put the pan back in the oven and cook for 6 minutes or so, until the chicken is cooked through and golden brown.
  5. Remove from the oven and serve with your choice of veg and sauce. A spicy sweet chilli dip is one of our favourites.

  • Looks great 👍. I also add freshly squeezed pomegranate juice, but please do it yourself, if you can. Commercial varieties are far too sweet. Bon Appetit!
