Gnocchi alla Sorrentina recipe

These days things are not going very well in Italy.... it is obvious to say that we console ourselves with food, right?
My mother prepared the Gnocchi alla Sorrentina for lunch. If a few days ago you enjoyed my Gnocchetti Prosciutto e Gorgonzola, I hope you will also appreciate these.
Gnocchi alla Sorrentina is a typical first course of Campania cuisine, in particular from Sorrento, from which it takes its name.
It is a dish made with homemade potato gnocchi, tomato sauce, fiordilatte mozzarella, basil and parmesan. A few simple ingredients that must first be stirred in a pot, then transferred to another crockpot where the Sorrento-style gnocchi are cooked in the oven for a few minutes, creating a crusty and stringy crust.
Making homemade gnocchi is not tricky, but it is a procedure that requires a certain level of "intuition", and won't always depend on what flour or potatoes you've used.
So let's buy them this time, okay? Look for fresh gnocchi. Maybe they are REALLY from Italy...!
Ingredients for the sauce (for 500gr of gnocchi):
- 700gr tomato sauce
- 25gr triple concentrate tomato
- 1 clove of garlic
- olive oil
Ingredients for the dressing:
- 200-300gr fiordilatte mozzarella
- a few fresh basil leaves
- Parmigiano Reggiano, to be grated
In a saucepan pour a drizzle of oil, a clove of whole peeled garlic, tomato concentrate and the tomato sauce, salt to taste, season with the basil leaves, then cover with the lid and cook over medium-low heat for about 30 minutes.
In the meantime, boil the gnocchi (as we have seen here). If you don't have a large enough pot, do it in two or three batches, it's not a problem. After the gnocchi is cooked, drain them with a slotted spoon and season them in a bowl with the sauce.
Take some terracotta bowls and start alternating layers of gnocchi, mozzarella and a little sauce that you have leftover. On top, grate some Parmesan.
The terracotta bowls are not fundamental, some use an ordinary oven dish, but the terracotta gives the gnocchi a distinctive flavour.
Bake your Gnocchi alla Sorrentina in an oven preheated to 250°C on grill mode for 5 minutes. Serve them hot and steaming in the bowls. Buon Appetito!
