Grilled, Fried Chicken?!

A touch healthier way of eating a fried chicken sandwich!

I have a pretty crappy diet, because I love food! Smash burgers, cheesesteaks, lobster in drawn butter, fried mozzarella sticks, and French fries are all food I eat way too much of. I decided recently I would put some more effort in eating a little better, and tonight's dinner is a reflection of that.

I wanted a fried chicken sandwich. I wanted to cook it in a quick and easy method. I didn't want a ton of dishes to mess with afterwards. And I didn't want the guilt of having eaten an unhealthy fried chicken sandwich. Tonight's dinner checked all of the boxes I needed it to. And it tasted pretty damn good.

I started by mixing up a bread-crumb mixture; bread-crumbs, Parmesan cheese, thyme, basil, cayenne pepper, garlic salt, fresh ground pepper, dried green onion, and a little extra virgin olive oil. I drug the chicken through an egg wash, coated it with the bread-crumb mixture, drug it back through the egg wash, and coated it some more with the bread crumbs...

And the chicken is now ready for the grill!

...and then threw it on the 500°F grill (on some foil so it wouldn't stick or loose any bread-crumbs). A couple of minutes on the grill, flipped so both sides cooked, was all the chicken needed to cook. I served it with sweet-potato fries from the air-fryer to keep with the theme of a slightly healthier meal.

I was very happy to find the chicken had a really crunchy outside, just like it was fried. But I was really surprised that the chicken was very juicy on the inside. The crust gave it a nice, savory flavor. I topped my sandwich with the usual lineup of lettuce, tomato, onion, and added one of my favorites; avocado!

  • This looks good. I do this version of “fried” chicken as well but in the oven, but never tried it on the grill. I’ll have to try this. I sometimes like to add Parmesan cheese and some spices to amp up the flavor a bit.
