I finely sliced red onion and garlic, chopped up some yellow pepper, courgette and quartered some baby plum tomatoes. Then season the yellow pepper, courgette, red onion, with salt, pepper, a sprinkle of cumin and mix in a tablespoon of harissa. Fry for 5 minutes then add the garlic, tomatoes and fry for about two more minutes.
Then I get 50g’s of couscous pour over 50ml of boiling water, cover for five minutes, season, squeeze in the juice from half a lemon, mix everything together, sprinkle over some coriander leaves and drizzle with extra-virgin olive oil. Yummo!
