Haven’t made a paella since home ec class back in my high school days. Thought I’d have a crack again tonight, and it turned out ace. 👌

Should note, I subbed out the chorizo for a lovely Mediterranean lamb sausage due to allergies, but it actually worked quite well, so something handy to keep in mind for non-pork eaters.
