Hemp seed, edamame and mung bean fettuccine

Ingredients

  • 200g hulled hemp seeds
  • 3 garlic cloves
  • 2 tbsp lemon juice
  • Pinch salt
  • 130ml unflavoured soy or almond milk
  • 60g sun dried tomatoes, drained (plus a few extra for garnish)
  • 450g Explore Cuisine Edamame and Mung Bean Fettuccine
  • 230g artichoke hearts, quartered
  • 60g basil leaves

Instructions

For the sun dried tomato and hemp seed Alfredo sauce

  1. Place hemp seeds, garlic, lemon juice, salt and half the milk into a blender and blend until smooth.
  2. Add remaining milk and blend again until smooth.
  3. Add the sun dried tomatoes and pulse until finely chopped (or blended in, if you prefer).

For the fettuccine Alfredo

  1. Cook fettuccine according to package instructions, then drain and return to the pan.
  2. Add the sun dried tomato and hemp seed Alfredo sauce, the artichoke hearts and basil leaves.
  3. Toss to coat the fettuccine in sauce. Garnish with the extra sun dried tomatoes.
