Italian cheesy goodness.
Foodtribe I have had a craving for some manicotti for a while now. To be one hundred I do not even remember the last time I had it.
The dough was made with fresh farm eggs which gave it that nice dark yellow color. Cut into the squares you see here then rolled into manicotti shells. Then stuffed with ricotta cheese and shredded Italian cheese blend. and some herbs and spices for a little flavor. It was then topped with a homemade ragu sauce and some more cheese of course.
We had some sub buns that we cut and stuffed with garlic butter and cheese. Wrapped the bread in foil and tossed them in the oven. Now my wife said the bread had a little to much garlic but to me it was spot on.
I had almost forgot how much I love manicotti you all. I do not know if the one hundred year old Italian grandmothers would call this authentic or not, but I enjoyed it all the same. Maybe our Italian Foodtribers can chime in and let me know in the comments. Stay safe out there Foodtribe.
