How to cook your Sunday roast chicken... on a barbecue

Is there anything better than a Sunday roast chicken? Enough to feed a whole family, or if it's just you, plenty of leftovers to see you through the week. If you can nail that combination of crispy skin, with soft, juicy meat... well, it's basically perfection. And about nailing that texture. What might seem like an easy task can be quite tricky. My dad (a chef) always said he would ask new recruits to prepare a roast chicken. It's not an easy feat, and some recipes call for days worth of work.

Well, with all this talk of Sunday roasts, how about taking your Sunday roast outside? Oh yes, you can get the perfect roast chicken on your barbecue. It won't take you 48 hours, and you'll have that crispy skin, juicy meat combo. Fire it up.

Simple roast chicken... on a barbecue

Crispy skin, soft, juicy meat. That's Sunday sorted.

Ingredients

  • One whole chicken
  • Olive oil
  • ...Rub for the chicken...
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried rosemary
  • 1 tsp lemon zest

Instructions

  1. Combine all the rub ingredients together.
  2. Drizzle a little olive oil on the chicken and then rub that rub all over the chicken.
  3. Setup your barbecue for indirect cooking at around 150C.
  4. Cook your chicken for around an hour and a half until it reaches an internal temperature of 75C.

  • Why not buy an already cooked chicken from the supermarket. Maybe it’s cheating a bit but you knowing already cooked no fear of salmonella or ecoli etc just put it straight on and marinate it . We buy a cooked whole chicken from Tesco when making a curry straight into a wok then add the sauce to the chicken with rice. I find the Tesco cooked chickens very good quality and delicious.
