How to make Cannelloni ricotta and spinach

To prepare this typical Italian dish is easier than it looks!

Cannelloni is a typical Italian dish, often associated with Sunday's lunch. It's a tradition that is dying nowadays, but in the past, the family members gathered on Sunday, usually at grandma's home to spend time together and eat tasteful dishes.

This recipe can have many variations exactly like lasagna which with it shares most of the ingredients. Like other Italian dishes, the recipe can be different from region to region, especially from Northern Italy and Southern Italy.

In simple terms, Cannelloni are just fresh pasta cylinders stuffed with meat or spinaches and ricotta cheese. The garnishment can be either ragù, simple tomato sauce, or bechamel.

Following, the recipe to make Cannelloni ricotta and spinach with tomato sauce.

Ingredients for 3/4 portions


600 grams frozen spinach (or the equivalent fresh)

350 grams ricotta cheese

(cow ricotta can be mixed with sheep ricotta if you like a more strong flavor)

150 grams of grated Parmesan cheese or Grana Padano Cheese

250 grams of fresh lasagna sheets


Nutmeg powder

1 egg


Tomato sauce

Olive oil

Coarse salt


If you want you can make fresh pasta instead of buying it, in that case, you need flour and eggs, in a ratio of 1 egg every 100 grams of flour.


Defrost spinaches, squeeze them to remove water and cut them in bits.

Put the spinaches in a bowl, add a pinch of salt, a pinch of nutmeg powder, ricotta cheese, grated cheese and if you want an egg. Mix everything.

If you're using lasagna sheets, cut them in a half like in the figure and place the filling in the middle. With a brush or a spoon moisten the bottom edge using water or egg white, this will help to seal the rolls.

Keep rolling Cannelloni until you run out of filling.

You can add tomato sauce without cooking it previously, just mix it in a bowl with a pinch of coarse salt and a tablespoon of olive oil. If you prefer you can cook it previously in a pan, adding a garlic glove, that will be removed at the end.

Spread tomato sauce on the bottom of a baking tin with high borders, place Cannelloni in it and cover with tomato sauce. Grate some cheese on top and bake following the instructions on the lasagna sheets package.
