How to make quesadillas on a blackstone
The griddle comes through for a quick weeknight dinner
I've realized the griddle is great for quick meals and it doesn't require my wife or I to do a lot of dishes afterwards. That makes it perfect for a work night after a long day. Tonight I threw together a quick dinner of chicken quesadillas using stuff we had around the kitchen.
I started by throwing some chopped onion on the hot griddle with a little olive oil. They sizzled away until they started to brown. Two cans of pre-cooked chicken breast chunks from my COVID-19 emergency pantry were also thrown on to warm up, and then everything was quickly mixed together.
All mixed together!
After I got it all mixed together I spread a little more olive oil on the grill and threw down some tortillas. Next, a bunch of cheese was spread out on the tortillas, and the onion and chicken mix was spread on top of this. Then more cheese was sprinkled on top, and each mess was topped with another tortilla. Then it was time to quickly flip so the both tortillas could brown.

Our quesadillas were topped with fresh chopped avocado, tomato, onion, and a little salsa and hot sauce. This was a really good meal that was really easy and fast to prepare on a weeknight. Even better, it was easy to clean up when dinner was done!
