How to make your own chilli powder – proceed at your own risk

S​o we have spoken about doing this for some time, making our own condiments. Specifically, chilli and curry powders. Today, we actually made the chilli powder, to a recipe given to us by my Wife's Aunt.

I​ must say, the recipe caught me on the hop. Corriander seeds? Curry Leaves? Roasted Black Pepper? Dried Red Chilli and Sweet Cumin and Cumin and a teaspoon of Dill Seed? What was going on here? So I turned to the ol' world-wide-web and asked it the recipe of Chili Powder. Horror! Shock! Sweet Paprika? Oregano? Cayenne Peppers?

T​urns out the only "correct" recipe on the 'Net was, take chilis dry them, grind them in a coffee grinder. My sainted Grand Mother just rolled in her grave!

O​nce everything was roasted, it was all bagged and taken to the Grinding Mill to be ground.

B​ottled straight from the mill, the powder was still hot to the touch. The aroma was fantastic, with the Coriander Seeds playing the key note (note to us in the future - cut back on the coriander?). Then came the taste-test. The tiniest of pinches, dropped on to the middle of the tongue.

H​ell-Fire! It was HOT - and after you gasped your way through the heat, there were LAYERS of subtleties that I'd never experienced with a chilli powder before.

Working out the economics of it, it cost twice the amount of any store brand chilli powder on average, gram for gram, but I have a feeling that we would be using it a LOT longer than any store brand, because it is anything but 'watered down'.

    • She will get on FAMOUSLY with my sons and wife. They pop snake-eye chilli like candy. My sons' breakfast scrambled eggs had more sliced green chilli than egg. My eyes just watered up looking at it!

    • It's all in the usage FFB. Generally, in our curries, we put anything between three and four teaspoons of CP. With the home-made stuff? I'm guessing two would be more than enough!
