If you have a gas cooker this is simple to do as you can roast the peppers on the stove.
If I am making baba ganoush or a pepper dip I always roast the peppers straight on the flame of my gas cooker.
Make sure that the metal spear you are using is rectangular otherwise they will just spin in circles. If you don't have any spears just put the pepper straight on the flame then turn it over with pincers.
When the peppers are completely blackened put them in a plastic bag and seal it to cool them then it is really easy to remove the blackened skin as the steam created has helped loosen it.
