I Am Only Eating Tofu, Eggplant, Porridge, and Coconut For The Next Month
And anything else that I really have not been a fan of in the past...
As we all know, the last year and change has been a very hard and weird time. I have been spending quite a lot of time pondering all that has changed across the globe, and I have come to the conclusion that like many other things, my tastebuds have changed also. Suddenly, I have grown a deep urge to eat porridge, bowls and bowls of the stuff, every day for breakfast. But I am not stopping there, oh no.
I will be indulging in an eggplant and tofu concoction for my lunches, washed down with a steaming mug of coconut milk, still with plenty of chunks in it. I think that this is in fact the way to create a better food world for myself. The purple fruit/vegetable (not really sure which to be honest) called eggplant is the key to my tastebuds' happiness. Mix it with some soybean cubes called tofu and we have a match made in heaven. If I am feeling particularly ravenous, I might just drizzle some coconut milk and coconut flakes over the top of my oatmeal in the morning to add a little razzle dazzle. I hope you all are excited to hear of any more ingredients or meals I decide to make with this new diet!
