Well, not quite carbonara - I had to use streaky bacon because unsmoked pancetta or guanciale was not a thing

Ignore the wrap, which was pure garlic bread stand=in indulgence - the carbonara was good.

All thanks to the 'acquired taste' that is www.youtube.com/watch?v=zgSKlRkL7JQ&t=1s - I'd refer more staid video, but everything I've tried by Adam has come up with roses.

    • A lot of the substitution sites I saw suggested that American bacon is normally smoked - is that the case? we do have a choice here and I much prefer unsmoked (and not a sweet cure either).
