I have some wild boar summer sausage...any cheese suggestions?

I ordered a log of wild boar summer sausage. I was thinking about doing a cheese board with it. Do you all have any cheese suggestions or thoughts of what to pair with this?

  • So many options! A creamy soft cheese (camembert/brie) will give nice texture balance and add a smooth creamy flavour to the sausage zing. Or a sharp cheddar would give you complimentary flavours. Or a smoked cheese would give you another level too. But what I'd recommend is, make a basic pasta dish. Put it all in an oven dish. Chop your sausage and put layers over the top to cover the pasta. Then cover the sausage with all the different cheeses you can find, feta, mozzarella, cheddar, brie, camembert, red Lester, Halloumi, parmesan, smoked cheese, Gouda, Swiss, Gruyere, the lot of whatever you've got! Then bake until golden and blipping. This will give you like a cheese fondue on top for you to fish out your bits of sausage. Or you can stir it all together after baking and just enjoy the food coma. I don't have the sausage but I'm tempted to get some to do this as I have a lot of cheese right now!

    • Generally here summer sausage is served with cheese and crackers and such. Which is why I asked about cheeses and stuff that might pair well with it. I will definitely check if I have any of those cheeses available.
