SPAM! In a burger!
I don't know why, but I've become obsessed with seeing what I can make with the sous vide immersion cooker AND what I can stuff into the middle of a burger patty. I recently tried sous vide burgers stuffed with pepper jack cheese...
...AND THEY WERE AWESOME!
Pepper jack cheese stuff burgers are AWESOME!
The pepper jack cheese burgers were so good that I wanted one again a couple of days later, so I dug into the fridge and got out everything I'd need to whip a couple up and toss them into the water bath to sous vide. That's when I noticed the leftover SPAM my dad had opened up just a couple of days prior, and the gears started turning in my head.
I prepared another pepper jack cheese stuffed burger for myself, a plain burger for my wife, and then I browned a chunk of SPAM to stuff another burger with. I vacuum sealed the burgers individually, and dropped them into a 140°F water bath to immersion cook for one hour and ten minutes. When my wife came home, the cheese stuffed burger and the plain burger went onto the grill for finishing, while the SPAM stuffed burger was left vacuum sealed, allowed to cool, and then tossed into the 'fridge. Until today.

Today, for lunch, I grabbed the SPAM stuffed burger out of the 'fridge to heat up. Technically, it has already been fully cooked. I left it sealed and tossed it into the microwave for 30 seconds to get it decently heated in the middle. I then tossed the SPAM stuffed burger onto the gas grill, preheated to 500°F, to finish it. While it was on the grill, I also hit it with the torch to further crisp the outside. And, while my burger bun was toasting on the grill, I melted two slices of pepper jack cheese on the top of my stuffed burger patty.
It was pretty good! I ate it on the toasted bun with lettuce, tomato, onion, mayonnaise, and ketchup. The SPAM in the middle lent a bit of a porky, salty flavor to the burger while having a slightly softer texture than the ground beef; not unpleasant at all. The ground beef retained all of it's awesome beefiness and was very juicy. I love sous vide burgers! But now I'm thinking about what else I can stuff into a burger patty!
