Improvised zucchini-cheese melt recipe
Tasty, juicy, easy and completely free to adapt for your personal taste
Ingredients:
Zucchini - 3 medium sized
Smoked Scamorza cheese - 300 grams
Creme Fraiche - 400 grams
Sliced bacon - 300 grams
Eggs - 3 medium sized
Dill, parsley, salt, cooking oil (a little bit of all)
Instructions:
Peel the zucchini, then slice them into circles. Get a tray, spread a bit of cooking oil on the bottom and the sides, so the meal won't stick, and arrange a base of the zucchini. It should look like this:

Next, get the Scamorza and grate a cheesy layer on top of the zucchini. Spread some bacon slices to complete the first layer. The result should look like this:

Repeat the same to do a second layer in the same sequence – zucchini, cheese, bacon. The result should almost fill the tray. If you have more left, you can do a third layer.
Now to seal them before baking. Mix the eggs with the creme fraiche, add some dill, a touch of salt, mix it well, until it's spread evenly in the tray. It should look like this:

Get the oven preheated to 200 degrees Celsius and cook it for 50-60 minutes. The most important thing to cook properly is the egg/creme mix, because you don't want possible salmonella! When it's done and you've left it for too long (it's me, we're talking about 😂 ) it should look like this:

Now get some parsley on top while it's still hot, so the parsley juices will pass their subtle taste and aroma below, without being overpowering. The end result, ready to eat, should look like this:

Just throw the green stuff on-top and don't bother too much. It's a lazy recipe that doesn't require any special presentation, but it will make you fall in love from the first bite.

Looks delicious! The zucchini doesn't cause too much moisture?
This remains properly juicy, because of the creme fraiche/egg blanket. And the smokey taste from the cheese gets deep in the zucchini, making them tasting like mildly barbecued 😋

This sounds pretty good and I am not a huge fan of zucchini.
I don't have much love for them too, but it's zucchini season and they fit easily everywhere 😊
