Weekly meal planning takes place on Friday evenings and involves paging through half-a-dozen sales ads for the local grocery stores. Chuck roast was on sale, so chuck roast is what's for dinner!
Beef stroganoff in the Instant Pot was ridiculously EASY! Mushrooms (1 cup), garlic (to our preference), and butter went into the pot, with a little flower. While the butter was melting away, I trimmed and sliced up the roast (2 lbs.) and decided to quickly brown it in some olive oil. The beef joined the mushrooms in the Instant Pot along with beef broth (4 cups) and some Worcestershire (to preference) for 18 minutes of cooking under pressure and then a quick release. Then it was as easy as dumping egg noodles into the pot (10 oz.) for another three minutes of cooking. Another quick release and sour cream was mixed in (1/2 cup). Once it was all stirred up, I thickened up the sauce with 2 tbsp. of corn starch mixed into 1/4 cup of cold water. I added salt and pepper to taste and served!

This made for a very good dinner!
I melted some Swiss cheese on mine and then enjoyed it with a very good, very bad beer!
