Is MSG really as bad as it's said to be?

Almost a month ago, I had a challenge for you to decide what I was making. Our friend Caravan Larry guessed umami seasoning, which was very close, but the real answer was MSG.
Monosodium glutamate is often deemed as something terrible for your health that should be avoided at all costs. The fact is, it naturally appears in many of the foods we enjoy on a daily basis. Some have higher levels than others, and these foods are the ones we go to for that umami flavor. 'Umami' is one of the five basic tastes (along with sweet, sour, bitter, salty) and is described as a 'savory' flavor.
MSG is a common flavor enhancer, and while it's deemed safe by the Food and Drug Administration (FDA), it's still controversial for a lot of people. If you fear MSG and think it is the seasoning of the devil, you may want to give up eating the foods I will be listing to make this wonderful seasoning mix.
How do you make MSG seasoning at home?
The seasoning mix I've made is with foods that have the highest amounts of MSG naturally, I did exclude anchovies from my mix, but they do have a high concentration of MSG naturally as well. The ingredients I used for this were garlic, tomatoes, onions, mushrooms, Parmigiano-Reggiano and Dashi Komdu.
Are you shocked these foods have some of the highest amounts of MSG? Honestly I kinda was. These are ingredients we often use on a daily basis, which makes me wonder: do the people who preach the fear of MSG give up these tasty ingredients as well?
I added these six ingredients to my dehydrator for a couple of days. After everything was good and dry I ground them all up (separately of course) into a fine powder. I then mixed equal parts of each with just a touch of fine sea salt. The flavor this combo produces is amazing! I did add a little extra garlic/onion to the mix, which for me made it even better.
I have used this umami seasoning on several things already – I have to try it before I post about whether it's any good or not. This seasoning brings such a depth of flavor to foods that I never thought possible. Yes, it is a bit of work to make, but I promise it is completely worth it. This will be in my seasoning cabinet from now on. It can be used on anything from meats, through to vegetables, or just plain noodles. It really is a flavor enhancer.
