Is that just me cooking huge portions?

Pasta with cherry tomatoes and eggplant.

Despite saying that it's too hot for pasta, here's my today's dinner, mezze penne with fresh tomato sauce and eggplant. I still have to get used to cooking just for myself, it turned out to be a big portion, not for the amount of pasta which was reasonable, but for the sauce. I have used the smallest eggplant I found and ten or so cherry tomatoes, but apparently was too much for a single person... Anyway, I've finished everything, because pasta is never enough.

The recipe is simple, you just need to cook in a pan the sliced tomatoes and eggplant with olive oil, a pinch of salt (I prefer coarse salt) and a garlic clove. Once the pasta is ready, garnish it with the sauce and some grated parmesan cheese, add a few leaves of basil if you have a fresh one, and enjoy!
