The Italians take pizza very seriously. We understand and appreciate that. It’s a delicious thing. Possibly even... the best thing.

But sometimes, you don’t want to eat a Margherita, you’re not feeling a funghi and you might not desire a Diavola. Sometimes, you just want to break the rules, go crazy, and throw some pineapple all over that base.

Well my friends, for those days, I’ve been busy experimenting with my Ooni pizza oven, hanging out in my back garden and committing delicious crimes against Italian pizza.

I can promise you every single one of these is a taste sensation. Yes, even when it’s got fish fingers on.

So turn up the heat, it’s time to get funky with your pizzas.

First up, you’ll want to whip up a batch of Ooni’s classic and foolproof dough.

Or take it up a notch with a sourdough base.

Give peas a chance: aka kids' dinner pizza

Yes, it's fish fingers and fries... on a pizza. Ok, stay with me here. There's no turning back, we're in this together. After mentioning to a friend that I was doing this feature and including this recipe, instead of recoiling in horror, she asked me to make one for her. And yes, she loved it. Said it reminded her of her favourite childhood dinner, when times were simpler and there wasn't a global pandemic on the loose. A fish finger sandwich is a beautiful thing – this is basically just an open sandwich if it helps you get over the whole, fish fingers on a pizza thing.

Kids' dinner pizza

Fish fingers and fries... and peas, on a pizza

Ingredients

  • Around 220g of pizza dough
  • 1 or 2 ladles of Ooni's classic tomato sauce
  • 3 fish fingers
  • Handful or 2 of fries
  • Handful of frozen peas
  • Mozzarella

Instructions

  1. Once you’ve got your dough and classic tomato sauce ready to go (recipes above), fire up your Ooni pizza oven.
  2. Cook three fish fingers and a handful or two of fries, according to the packets.
  3. Use the classic tomato sauce as the base.
  4. Add your mozzarella cheese.
  5. Scatter some frozen peas over the top.
  6. Cook your pizza in the Ooni, ensuring you rotate it regularly.
  7. Once cooked, top with the fish fingers and fries (they get a bit over toasted if you add them beforehand), and finish with a final flourish – ketchup drizzle.

Some like it hot: Buffalo chicken pizza

Yes... it's got pineapple on it. The greatest debate of modern times: does pineapple belong on a pizza? I was staunchly team never, until Tim Rodie enlightened me to the combination of jalapeños and pineapple. It's an absolute winner. The heat from the chillies heightens your sense of smell, which is an important factor in taste, and also enhances the sweet acidity of the fruit. Add Frank's Hot Buffalo Sauce, a double whammy of cheese: melty mozzarella and cooling, salty blue cheese, bit of chicken and a crunch from some celery at the end. This was a ground-breaking, earth changing discovery, and I will 100% be making this pizza again. Sorry Italy.

Hot and fiery... with some cooling pineapple

Ingredients

  • Around 220g of pizza dough
  • Frank's hot Buffalo sauce
  • Cooked spicy chicken pieces
  • Jalapeños
  • Pineapple chunks
  • Mozzarella
  • Blue cheese
  • Top with celery or spring onions after cooking

Instructions

  1. Fire up your Ooni pizza oven.
  2. Spread Frank's Hot Buffalo Sauce all over your pizza dough.
  3. Top with the chicken, jalapeños, pineapple chunks, mozzarella and blue cheese.
  4. Cook in the Ooni.
  5. Top with small chunks of celery or spring onion after cooking.

Cheese and pickle pizza

Does what it says on the tin (although James May would probably want some Branston's on there...). Pickles are a bit like Marmite, and people have some incredibly strong opinions on them. You can probably tell from the picture below where I stand on the matter, although I thought I'd best leave some space clear so I didn't weigh it down so much it wouldn't cook... those pickles are weighty. Even after cooking, the pickles maintain a delicious bite, and this is an easy way to get your sweet, salty, sour hit.

  • Around 220g of pizza dough
  • 1 or 2 ladles of Ooni's classic tomato sauce
  • Mozzarella
  • Many pickles

Instructions

  1. Once you’ve got your dough and classic tomato sauce ready to go (recipes above), fire up your Ooni pizza oven.
  2. Top your base with the tomato sauce, plenty of mozzarella, and as many pickles as physically possible.
  3. Cook in your Ooni.

Chicken tikka masala pizza

The UK's national dish, served on a garlic naan base. Everyone loves a curry, everyone loves pizza, ergo, everyone's going to love this curry pizza. Guaranteed. Made on a garlic naan base, this is a squidgy, soft, warming, sort-of-teardrop-shaped plate of deliciousness. The bite from the onions and peppers gives you a nice bit of texture, and a cooling bowl of raita to dip your crusts finishes everything off nicely.

Ingredients

  • Whip up a batch of Ooni's sourdough naan (https://uk.ooni.com/blogs/recipes/sourdough-naan)
  • Tikka masala sauce (either out of a jar, or make your own, no judgements here)
  • Tandoori chicken
  • Red pepper, cut into small chunks
  • Red onion, cut into thin slices
  • Coriander
  • Raita

Instructions

  1. Fire up your Ooni pizza oven.
  2. Use around 220g of sourdough naan
  3. Spread the tikka masala sauce onto your base.
  4. Top with tandoori chicken, onion and pepper.
  5. Cook your pizza.
  6. Finish with a smattering of coriander and serve with raita.

Huevos Rancheros breakfast feast pizza

Runny egg and refreshing avocado. Best way to start the day. Is there anything more delicious than breaking open an egg to get that runny yolk oozing over everything? Dip your crusts in it, dip your avocado slices in it, dip your face in it. Everything goes with this pizza. Heck, you can even have it for breakfast, because it's a Huevos Rancheros pizza... Sharp, sweet, spicy base, mixed with the creaminess of the avocado, all topped off with that oozy egg.

  • Around 220g of Ooni classic dough
  • Either classic tomato sauce, or a spicy tomato sauce for the base
  • Avocado, cut into thin slices
  • 1 egg
  • Mozzarella
  • Red pepper, cut into small chunks

Instructions

  1. Fire up your Ooni pizza oven.
  2. Spread your base with spicy tomato sauce.
  3. Add your mozzarella and pepper chunks.
  4. Carefully crack your egg into the middle of the pizza.
  5. Cook your pizza.
  6. Finish with slices of avocado and maybe a drizzle of sour cream.

Greek salad pizza

Take your tastebuds on a trip to the Greek islands. Sometimes you want to keep things fresh, and light, but still incredibly tasty. If you're in one of those moods, this Greek salad pizza is the one for you. It's all the flavours of a Greek salad (clue's in the name), but... on a pizza. Fresh, tangy, creamy, salty, it's all there. And if your idea of a salad means 'MEAT', you can always pop some chicken or lamb on as well. Just make sure you leave the cucumber until after cooking, because no-one wants cooked cucumber. Bleugh.

Ingredients

  • Around 220g of Ooni classic pizza dough
  • 1 or 2 ladles of classic tomato sauce
  • Feta cheese
  • Kalamata olives, pitted
  • Tomatoes, cut into small chunks
  • Red onion, cut into thin slices
  • Oregano
  • Cucumber, cut into small chunks
  • (You could add chicken or lamb as well if you don't want it veggie)

Instructions

  1. Fire up your Ooni pizza oven.
  2. Spread the tomato sauce on the base.
  3. Top with crumbled feta cheese, olives, tomato, red onion and oregano.
  4. Cook your pizza.
  5. Finish with cucumber and a drizzle of Greek olive oil.

    This is so crazy and non-fitting that I have to cook it for myself just to disgust my parents watching me eating this! Well, I love all the ingredients on it on it’s own...yes, I will give it a try! 😄
