Leftover vegetables make a great dish!

I sliced some onions, tomatoes, eggplant and some mushrooms, but you can add any leftover vegetables you have at home, such as zuccini, potatoes, sweet potatoes, bell peppers... This way it's different every time. I Added salt, pepper, tyme and enough olive oil for it to reach all the vegetables. Any herbs you like will add flavour and a personal touch to your plate; this is a dish you can experiment a lot with! My mom likes to add a little bit of cheese but I would reccomend not covering it all with it, if you don't want a heavy meal. Then I put the tray into the oven for 30 minutes and this is the result. (It's basically a Ratatouille, I'm just more chaotic placing the ingredients)
