Lemon Rice and Pork Vindaloo, from my Ninja Foodi
The recipes were for One Pot, but seemed compatible with my Foodi.
I didn't have Serrano pepper and used several mixed peppers - it was still quite mild. And I added a bit of tamarind paste for piquancy. The last stage is to saute to reduce so I put the curry in a pan to reduce and cooked the rice.
Both were very nice - and of course not at all like BIR Vindaloo.
