Low fat baked French toast recipe

In my quest for new recipes to feed to my recently expanded family, I came across a recipe for Low Fat Baked French Toast. I thought that I would just cut out the salt and then follow the recipe as it was written, but then my imagination (along with my constant desire/need to save time) got involved.
I started by changing the proportions to make half a recipe, but also ended up halving the amount of bread called for (using some of my homemade sourdough), cutting the amount of sweetener (figuring - correctly - that we would end up adding more at the table anyway), swapping in maple syrup for the honey, and changing the instructions to simplify things a bit.
It turned out great! My father-in-law and I were alone for breakfast today and - as you can see from the photos - we ended up eating up most of it (along with some local peaches and blueberries on the side). Father-in-law liked it so much, he asked for seconds, a rare occurrence! We did manage to leave some behind for my hubby, who was busy on his treadmill. 🤣 Another recipe for the weekly rotation!
After I get to the grocery store for supplies, my next adventure will be trying a recipe that I found for Low Sodium Breakfast Sausage - it's another one that I won't be eating, but my FiL is eagerly looking forward to it, since he loves sausage and the commercial stuff is verboten to him.

A low sodium, low fat breakfast treat!
Ingredients
- 4 ounces or more bread, torn into pieces (I used sourdough)
- 1 apple, peeled & chopped (I used golden delicious)
- 3 eggs
- 3/4 cups milk
- 1/4 cup maple syrup
- 1/2 tablespoon vanilla
- 1 tablespoon cinnamon
Instructions
- Lightly grease a standard size pie dish.
- Cover bottom of dish with bread pieces. Spread chopped apple over the bread.
- Beat together eggs, milk, maple syrup, vanilla and cinnamon until well blended. Pour over the bread and apple. Cover and refrigerate overnight.
- In the morning, remove the pie dish from the fridge and preheat the oven to 400°F. Bake for 45 minutes, until it is beginning to brown.
Recipe Notes
Also good sprinkled with about half a cup of chopped walnuts at the same time the apple pieces are added. Serve with more maple syrup! 😋
