Low Sodium Meatloaf

Guess what? I actually cooked meat tonight (for the first time in decades!). My fil has been patiently eating vegetarian or vegan foods for more than a month now, except for a couple of times when my husband had some spare time to cook, so I decided that he deserved a little bit of a carnivorous treat. I found a recipe for low sodium meatloaf on Food.com that a woman had come up with to serve to her mother who had CHF ( www.food.com/recipe/low-sodium-meatloaf-440966 ). It sounded pretty good, so I decided to give it a whirl.
I have no idea how it tasted, but it smelled great! My father-in-law proclaimed it to be "very good," so I guess it's now part of the regular rotation. He plans to have a meatloaf sandwich for lunch tomorrow! The stars must be in a strange alignment, though: It's not every day when I cook meat, and @Jane Fyffe cooks vegan chili ( foodtribe.com/p/my-journey-through-foodtribe-vegan-NVnoTo_eTuCzV1Stqu_CIA )! 😂
