Madras and Flat Breads
I wasn't going to post because I expected the Madras to be good - but the flatbreads excelled.
First the Madras: www.youtube.com/watch?v=ZmDD4ScjRi4, I did it from his book (vol 1) pretty much as is - including the coffee, L&P, and the onion paste and TBH haven't watched the videa. It was not hot in the way that some off the shelf madras can be, rather tangy and interesting.
Then the flatbreads: I have been experimenting with naan and chapatis and while I know its silly money to buy flour and water made up, I get really annoyed and stressed by the sticky mess that I'm trying to knead. These were Aldi Piadina Flatbreads, dry fried per the packet, and they were fluffy and soft and much better than most shop-bought naan and chapatis. Even though a couple of days out of date. Puffed up a bit, nice browning, somewhere between a chapati and a naan.
So, Italian/BIR fusion, home shop/home-made fusion too.
