Make Your Own Chilli Oil
Finally through the Christmas feasting - I am working my way through pickling, preserving or making jam out of anything leftover.....
I hate wasting good ingredients so if I have time I think of ways to use them up.
On this occasion I was also inspired to do this because we had a lovely bottle of whisky as a gift (which I polished off particularly quickly due to a yuletide cold) and the bottle was such a lovely shape it was a shame to throw it away.
First I soaked off the labels then sterilised the bottle by filling it with boiling water and letting it stand for five minutes before draining it and letting it dry out.
Just a handful of red chillies will be enough
I took a handful of chillies and chopped them in a blender with a pinch of salt. Then added them to a pan with half a litre of sunflower oil.
I brought the oil to the boil and then simmered it as slowly as I could for 15 minutes when took it off the heat and allowed it to cool.
Filtering the oil
I then filtered the oil through a muslin cloth into the bottle and it was done......
This oil will be really versatile to use on salads and pizza and will last for about a year.
