Ingredients

  • 150gms All Purpose Flour (coconut flour, oat flour or almond flour can be used too)
  • 1 Large Egg
  • 1 Cup Milk
  • 1 and a 1/2 cup Orange Juice
  • 1/2 Water (to adjust the consistency)
  • 3tbsp Melted Butter
  • 3tbsp Castor sugar or Sugar (if you like it, extra sweet)
  • 2tbsp Cream Cheese
  • 2 Mandarin (or orange)
  • 1tsp Cornflour (for mandarin sauce)
  • Garnish (mandarin zest, honey drizzle, crushed walnuts, them and almond flakes)

Instructions

Orange juice will be a bonus for this recipe. I have used coconut flour for these crepes to make them a bit more healthy

  1. Crepes: In a bowl add Flour, 2tbsp Sugar, 1 Egg, 1 cup Orange Juice, 1 cup Milk, and 1tbsp Melted Butter, and whisk well (add water for thin consistency, if needed). Grease a pan with slight butter and make crepes by pouring a thin layer in a circular motion and cook both sides for 2 minutes. Make around three crepes in batches.
  2. Cheese Filling: In a small bowl add cream cheese, 1tbsp sugar, and small chopped pieces of mandarin (around 4 slices) and mix well.
  3. Mandarin Sauce: In a small saucepan, heat 2tbsp melted butter, 5-6 full slices of mandarin, add 1/2 cup orange juice, 3tbsp milk, water starch (mix 1tsp corn starch+1tsp water) mix well on low heat for 1 minute or until you get a thick sauce consistency.
  4. Once everything is ready, fill around 1tbsp cheese filling in each crepe and roll as you like, pour the mandarin sauce over the crepes and drizzle with some honey. I have garnished the crepes with a handful of crushed walnuts and almonds flakes for that extra crunch.

Recipe Notes

Enjoy these gorgeous and aromatic crepes. I promise you will always keep making them.
