I started off by making a marinade from cumin, garlic, black pepper, lemon zest & juice, tomato puree, finely chopped coriander, finely grated onion and olive oil.
I covered a chicken breast with cling film then beat it with my fist literally till it's about a centimetre and a half thick. Covered it in the marinade and put it in a griddle pan for four minutes each side.
Then served it with some rocket dressed in extra-virgin olive oil & lemon with quatered baby potatoes tossed in olive oil, salt, black pepper, smoked paprika, oregano and roasted in the oven for 30 minutes.
Nice with a chilled glass of Albariño!
