I hope you all have your creative juices flowing for this challenge. This one is for you Sir John, you had to know something was going to be created for you. I call it the McColeman Sliders. I used Hawaiian sweet rolls for the buns so it has that light sweetness to it. These were pan toasted and a homemade garlic aioli applied to top and bottom. I made the same batter that was used in the potato scallops but added shrimp to it and used ring moulds so I would have a shrimp patty. In a skillet I fried up some sliced chorizo because we all know John likes his chorizo.
My toppings for the sliders were shredded lettuce, onion, tomato and banana peppers. Let me tell you what... these flavors married well allowing for a well balanced sandwich. It was overall a success that I would make again with just a few adjustments.
