Meal prep & a full week of vegan lunch ideas

Last Sunday I made some meal prepping for the week, so here's what I had for lunch over these past few days

Monday: Potato salad and smoked tofu

For this one I only had to cook the smoked tofu for 10 minutes at 180Β°C!

Tuesday: Pesto tofu sandwich

I used the remaining tofu and made a delicious sandwich with some pesto, vegan cheese, smoked tofu, vegan mayo, spring onions and lettuce from the balcony!

Wednesday: Lentils with salad and bread

I only had to add a dressing to the salad and heat the lentils.

Thursday: Basmati rice & cannellini beans

I cooked some basmati rice to serve with my beans. I know the picture is not very appealing, but I assure you that it was delicious.

Friday: Burger & fries
