Mediterranean fusion: Salmon fillets with Sicilian ratatouille recipe

A fresh Mediterranean mid-week meal

Mediterranean flavours are the elite of the elite, so you can imagine how much we love this French/Italian fusion.

Fragrant salmon fillets with sage, and ratatouille (but make it Sicilian). What more could you ask for in a fresh and wholesome weekday dish?

Salmon fillets with Sicilian ratatouille

An Italian spin on the french classic

  • 4 salmon fillets
  • 8 sage leaves
  • 1 ActiFry spoonfuls of olive oil
  • 2 small courgettes, diced
  • 6 tomatoes on the vine, cut into 2cm cubes
  • 2 sticks celery, sliced
  • 1 chopped onion
  • 3 cloves of garlic, crushed
  • 3 ActiFry spoonfuls of drained, small capers
  • 1 ActiFry spoonful olive oil
  • 2 teaspoons of balsamic vinegar
  • 250 ml of vegetable stock
  • 250 ml of vegetable stock
  • Caperberries and sprigs of fresh sage, to garnish


  1. Cut a slit in the middle of the salmon fillets and insert 2 sage leaves.
  2. Place them on the tray and drizzle with 1 ActiFry spoonful of olive oil. Season generously. Refrigerate.
  3. Wash the vegetables. Dice the courgettes and tomatoes into equally-sized 2 cm cubes.
  4. Cut the celery into small pieces.
  5. Put all the vegetables into the cooking pan with the capers, season generously with salt, pour over the stock, balsamic vinegar and the rest of the oil. Close the lid without adding the tray.
  6. Configure your ActiFry to the specified time and begin the first stage of cooking.
  7. When the timer sounds, add the tray with the salmon fillets and begin the second stage of cooking. The vegetables will stay warm in the bottom section, but won't overcook!
  8. Serve the salmon with the Sicilian ratatouille and al dente spaghetti.
