A quick and easy way to use up the last of your rice and pack out a salad with some carbs is to make a Mediterranean salad and a crafty cheat is to buy a small salad bowl from your local supermarket, like the one below and add some other ingredients to the salad while using some leftover rice and coating the salad and rice in a honey dressing.
Mediterranean rice salad with honey dressing makes an ideal partner with quiche, ham, or cheese, fish or anything that takes your fancy and will be enough for two people.
WHAT YOU NEED
One small salad bowl. Typical bowls normally consist of chopped salad vegetables that including mixed lettuce, peppers, tomatoes, onions and sometimes sweet corn.
Half an onion
One large cooked beetroot
250 g of Cooked Rice

WHAT TO DO
Place the mixed salad into a large salad bowl, thinly cut the onions into slices, cut up the beetroot into small chunks or large rectangles, cut the olives into rings, add the rice and all the vegetables into the bowl and pour over the honey dressing, then stir lightly in the bowl.
