Meethe Chawal recipe: Who knew rice, sugar and colouring could taste so good?
My continued journey through Indian desserts...
Meethe Chawal or jarda, which translates to sweet rice, is a traditional Punjabi dessert which is popular around the Punjab, Pakistan region. This popular dessert is served during weddings, religious festivals and anytime you need a sweet fix.
Jarda can be made in one in two ways: either out of milk, or out of water. The milk version is the Pakistani way of making it, and the version made of water is the Punjabi version. In this recipe, we'll be making the version out of water.
This yellow bowl of joy is my family’s favourite dessert, and I’m sure it will become one of yours.
Sugar, rice and food colouring make a really tasty treat
Ingredients
- 1 cup of basmati rice
- 1 cup of white sugar
- Enough water to fill half a large pot
- 1 tsp yellow or orange food colouring
- 2 tbsp of ghee
- 4 cloves
Instructions
- In a large pot, add your rice, fill your pot halfway with water, and add in your food colouring.
- Cook the rice until it is 70% cooked.
- Drain out all the water from your rice and set aside.
- In another pot, add your ghee and fry off your cloves.
- Add the rice and stir though.
- Sprinkle your sugar on the rice and place a lid on the pot. Make sure you don’t stir the sugar in, just allow it to sit on top of the rice.
- After a couple of minutes, stir the rice.
- Once the rice is fully cooked, turn off your flame and serve.
Recipe Notes
You can add in dried fruits and nuts too. Just add them when you add your rice to the ghee.
