A comforting, healthy Moroccan soup

Ingredients

  • 150gms Mixed Beans
  • 1 large Onion
  • 2 tbsp. Tomato puree
  • 2 Garlic Cloves
  • 1 Tomato
  • 1 cube Veg or Chicken Stock
  • Seasoning, herbs and spices (salt, black pepper, chili flakes, cumin powder, lemon juice and cilantro/coriander)
  • Garnish (spring onions and ginger slices)

Instructions

  1. I normally cook my Harira in a pressure cooker as it helps me lessen the time for the beans to cook due to the pressure from the pot, if you are using a normal vessel, the cooking time will be a few minutes longer to make sure the beans are soft and cooked well.
  2. In a pot heat 2 tbsp. oil, add minced garlic and cook until fragrant. Add diced onion and cook until soft and brown. Add diced tomato and 2 tbsp. tomato paste.
  3. Add salt, 1 tbsp. black pepper, 1 tbsp. chili flakes, 1 tbsp. lemon juice, 1/2 tbsp. cumin powder and stir well.
  4. Add the mixed beans and give it a good mix. Add 300ml warm water with 1 cube of Veg or Chicken stock. Close the lid and cook until 3 whistles from the cooker or for about 20 minutes or until the beans are cooked if using a normal pot.
  5. Once cooked, add handful chopped coriander/cilantro and mix well. Garnish with spring onions and some julienne ginger.

Recipe Notes

Serve with a slice of lemon wedge on the side for that extra zesty flavor. Enjoy with a slice of bread or just on its own. Let me know in the comments section if you like this quick and tasty Harira version.
