Mushroom and coconut soup recipe

I read a similar recipe a few weeks ago. I could only remember parts of it, but it turned out really well, so here's how I made it.

Mushroom and coconut soup recipe

Ingredients

  • Garlic
  • Onion
  • Mushrooms
  • Carrot
  • Vegetable broth
  • Soy sauce
  • Sugar
  • Lemon zest
  • Coconut milk
  • Curry powder
  • Salt and pepper
  • Olive oil
  • Ginger

Instructions

Preparation:

  1. Slice the garlic, onion, mushrooms and carrot
  2. Preheat the broth in a pot (I used about 1L for 1 can of coconut milk)

Cooking:

  1. In a pot, we put a little bit of olive oil and we add the garlic until it turns golden.
  2. We add the onion and cook it until soft, we add the mushrooms and cook them until they're almost done.
  3. We add the carrot, soy sauce, a spoon of sugar, a spoon of lemon zest, half a spoon of ginger and a little bit of salt and pepper.
  4. We cook it for a little bit and when is all mixed we add the broth, the coconut milk, and 1 or 2 spoons of curry powder. We let it simmer for a little bit.
  5. After 5-10 min we taste and fix the salt if needed, but keep in mind this soup is a little bit sweet.
  6. We let it simmer for 15-20 mins. The more you cook it the creamier it will be.
