My attempt at making 'healthier' nachos
Maybe not the healthiest, but healthier than how I usually make them!
A while back, I did something stupid for dinner and created "Stupid Nachos". This was a HUGE platter of nachos, piled with so much stuff as to render them STUPID! I ate these Stupid Nachos with the disproving glare of my beautiful wife while she ate a salad. It was time for me to do better!

My "Stupid Nachos"!!!!
My wife and I made salmon with a Southwest style rub and served with an avocado spread similar to guacamole. I decided to turn my plate into salmon nachos! But, I did a more responsible sized portion, and kept the ingredients much similar and a touch healthier.
I started with a layer of tortilla chips, and sprinkled those with shredded cheddar. The tray with the chips and cheese went into the oven to melt the cheese, just briefly. Once out of the oven, I broke up the salmon and distributed over the top of my tortilla chips, then I liberally added the avocado spread that was meant to be served on the salmon. On top of that I added Mexican style rice, fat free sour cream, salsa, and Cholula hot sauce.
Not piled as high, but still good!
The salmon was actually good on the nachos!

These were great nachos! The Mexican style seasoning on the salmon went very well with the lightness of the salmon and added to the nacho flavors. While these weren't the healthiest of nachos, they were markedly better than how I usually to them. Maybe they are Slightly Less Stupid Nachos? I'd be slightly less stupid again!
