My carbonara craving got a little out of hand

No Nonnas cried over this post, I hope

FoodTribe, I love pasta of all kinds, it's just so good, regardless of what John Coleman says. My all time favorite is carbonara, not this stuff with creams and other ingredients that would make Italian Nonnas cry but the simple and traditional carbonara that will make the Nonnas proud, at least I hope, I don't want beat with a loaf of bread.

This was made with nothing more than egg, spaghetti, bacon, some salted pasta water and parmesan cheese. Now the reason I say I hope I don't upset the Nonnas is because I used American bacon (it's what I had) and not guanciale.

As you all can see, I really like carbonara, this is a mountain of pasta, bacon and cheese, that I will gladly eat my way down and that is exactly what I did. Even when I was finished with this plate all I could think was " I need more"

If you have not had a traditional carbonara you are cheating yourself out of some truly amazing food. I do want to give credit to our friend Valentina Zanola for the recipe and teaching us how to make carbonara in a way that will not make Italian Nonnas cry.

  • Hands down my favorite pasta. I bought 4 pounds of bacon and two dozen eggs just so I would have enough to make it sometime this week! I do like a little basil with mine though!
