My #FelixFakeaways PB & honey & apple sandwich
Slightly different than James May's sandwich
So I was hoping to do one more post for this challenge but it was looking weak in the fridge. Then I realized I was looking in the wrong place for my leftovers. I spotted a granny smith apple on the island that was in desperate need of being used. Then it hit me, I wanted to try a sandwich that our friend Leila Lopez Marks made from watching James May on Foodtribe's YouTube channel.
I knew I had honey but peanut butter and bread was my worry. Luckily buried in the cabinet I found a jar of peanut butter with just enough to do what I wanted. A quick look in the bread drawer and I found a rolled up bread bag with just a few slices left. After making sure the bread did not have green velvet growing on it I was ready to make my sandwich.
I diced my apple into small pieces to make sure there was no bad spots. I tossed that into a bowl and added what peanut butter was left in the jar and a generous spoonful of dark honey. I mixed it all up nicely and made my sandwich.
I must say this really does work well together. I will make this again when I have more apples. I will say it would be better with white bread instead of wheat and I would prefer a light honey instead of the dark. With the combo I had it was a little more earthy than I want, but really good none the less.
