My first Kobe beef burger
My first BBQtribe food post has to be a burger
You all know my first food post to BBQtribe has to be a grilled burger. This is not just any burger though, this is a Kobe beef burger. Now I have never tried Kobe beef before so this was a real treat.
First thing I noticed was a lack of fat. They also seemed heavy for no bigger than they were. For these I cheated and fired up the gas grill. I also threw on a couple onion slices.
I wanted to keep it simple so I could taste that Kobe beef. So a sprinkle of fine sea salt, two slices of smoked gouda cheese, grilled onions, kewpie mayo, just a a small amount of ketchup and mustard and of course cayenne.
There is definitely a texture difference, it's more like a ground sirloin. It's juicy without being greasy, which is very nice. I did really enjoy it and I get to say I have tried Kobe beef. Is it worth the high price? To be honest...not really. I would much prefer to spend the money on some ground wagyu.

Hey Doug, so they're actually 'kobe style' burgers and not actually kobe burgers, which might be why they didn't meet your expectations! Less than 10% of certified 'proper' kobe makes it out of Japan, so it's really hard to get the real stuff, and when you do find it, it's crazy expensive. Most of the beef in the US that's labelled as 'kobe' beef isn't real kobe, as the US doesn't recognise the 'kobe beef' trademark!
And kobe is a type of wagyu... i.e. all the cattle in Japan are wagyu, but only a very select few are kobe.
