My granny's Bonfire Night Lancashire Parkin recipe
Remember remember the 5th of November... Make this now and it will be ready!
Rich and moist ginger cake with treacle especially for Bonfire night
Ingredients
- 350g self raising flour
- ¼ teaspoon of nutmeg
- 3 teaspoons of ground ginger
- ¼ teaspoon mixed spice
- ½ teaspoon bicarbonate of soda
- 1 small beaten egg
- 3 tablespoons of warm milk
- 100g softened butter
- ½ cup black treacle
Instructions
Set the oven to 180 degrees C
- Grease and line a 10 x 8 inch baking tin.
- Sift the flour and spices then rub in the butter until the mix resembles fine breadcrumbs.
- Gently warm the treacle.
- In the meantime, add the bicarbonate of soda to the warm milk and add it to the treacle. Stir and remove from the heat.
- Pour the treacle mixture into the flour and mix well.
- Add the egg, beating the mixture gently and then pour into the prepared baking tin.
- Cook for 45 to 50 minutes then turn out onto a wire rack to cool. It should be firm and springy.
- Store in an airtight container for a couple of days before eating.
