My Journey Through FoodTribe: Apple Soda Chicken
Some home cooking in the Canary Islands with Eugenia Machado.
This is not what Eugenia Machado originally called it but since I can't get that actual soda, time for a bit of a name change. She had called it 'Appletiser Chicken'. Anyways, this was few ingredients and basic but what is worst I had to find the closest substitutions I could. Not only could I not find the apple soda she used but for some reason I could not find dried mushroom soup! So I used a sugarcane apple soda I had available along with a dried mushroom gravy pack. The soda itself had a very light and refreshing taste and I definitely won't mind drinking that again. We used to have dried mushroom soup, I'm not sure if it is just currently not available now due to all the COVID stuff or what but I figured the mushroom gravy would be a good substitution. Anyways back to the dish....This makes a very good base dish that you could tweak anyway you like or just keep as is and it is good. You end up with a light sweetness and bit of a salty umami flavors. I will more than likely fix this again but one main change, I will use boneless thighs next time instead of breast. There are a few vegtables that I think would work well with this like broccoli, carrots and bamboo. This is definitely worth a try so make sure to hit up Eugenia's post for all the delicious details!
