When I posted the FoodTribe potluck, chicken drumsticks baked in peri-peri and butter is what Jesse Billington said he would bring. After reading that I knew I needed to try that.
While cooking it, it makes such a tasty sauce as the chicken juices mixes in with the peri-peri and butter. It thickens into a nice sauce.
If I remember right Jesse says he uses Nando's mild sauce... well, I had a bottle of the XX hot in fridge already so that is what I went with.
I will make this again, but I'm thinking about using boneless thighs and I want to try the garlic sauce next time. As far as I know he has never had a post about this, but go check out his profile as there are a lot of tasty sounding recipes. Thanks Jesse!
