My Journey Through FoodTribe: Pesto Potato Bake

Natali Eleftheriou had posted this Pesto Potato Bake Tray a little while back and I thought that they didn't sound too bad. Boy was I wrong. They were GREAT! I did do this home cook style as in no measuring but close estimates and mine was not done vegan. I made my own pesto, trying to work on cutting down some of my basil jungle and I topped with sour cream instead of vegan yogurt. I was originally worried about the combination of potatoes and beans with pesto but they worked good together. The pesto was not overpowering and seasoned this dish nicely.
