A trip to the Canary Islands with Eugenia Machado
This was based on Eugenia Machado's recipe for Spanish Tuna Salad. I ate this with some white long grain rice and it wasn't too bad. I did use red vine vinegar instead of white, cilantro instead of parsley and I added some lime. This was canned tuna that I used for this recipe. Having this as a lettuce wrap I think would be excellent and I will try that next time. Along with more onions, peppers and fresh herbs. Thanks Eugenia Machado for this recipe!
