My month of feeding 5 for under $15.00 (Meal 1)
Meal 1- Spicy Spinach Quesadillas, even better than I expected.
Okay, so you’re probably thinking of course you can make plenty of cheap dinners to feed your family for under $15.00..hot dogs, Ramen noodles, Pb and J, macaroni and cheese. That’s not what I mean by feeding 5 for under $15 though. I am going to make “real” meals all month long and I am not going to spend my entire check doing it.
I am the only woman in a family of nothing but men, 2 brothers, a Dad, My husband and my 3 sons. I’ve learned 2 things from being surrounded by men over the years, farts are always funny and boys are always hungry. This became even more true when my kids started developing the ”growing boy” appetite. I just can’t keep up between buying Febreeze and groceries. While I can't do anything about the Febreeze, I decided we are going to try a month of “cheap” meals and see how that goes.
Meal 1: Spicy Spinach Quesadillas
Ingredients: Baby Spinach, Fresh Spicy Salsa, Grated Pepperjack, Tortillas, Shredded Chicken. Total: $13.62 (14.62 with Mexican rice as a side).
So I will start off by saying this meal really doesn't need the rice as a side, however I chose to include it because it helps keep my boys stomachs full. You can buy pre-packaged Mexican rice for under $1.00. I won't lie, I guess I am technically over budget on "meal 1" because I made homemade Mexican rice, to be fair, I already had the ingredients on hand so no money was spent to add this. If you are truly looking to stay under 15.00 and you don't have the ingredients for homemade rice already laying around, the pre-packaged Mexican Rice tastes pretty great too and will still keep you under budget.

Cooking time for Quesadillas: About 15 minutes
Final Thoughts: Delicious. The whole family ate every last bite. There was enough left over for my work lunch the next day.
