New cookbook: Finch Bakery sisters will have you baking showstoppers in no time

It's great to see people who achieved success during lockdown. Despite some pretty large hurdles, people adapted, changed, and grew.

Two people who very much fall into that bracket are sisters Lauren and Rachel Finch. They own Finch Bakery in the north-west of England, and before lockdown, had huge queues of people lining up for their best selling cake jars and other amazing bakes.

When businesses had to shut up shop, they went online, selling thousands of brownies, cupcakes and cake jars every day, within minutes of them going online.

Despite all that, and amassing 142,000 followers on Instagram and 79,000 followers on Facebook, they also found time to write a cookbook: Finch Bakery, Sweet Homemade Treats and Showstopper Celebration Cakes.

The book features 75 foolproof recipes for cupcakes, scones, cookies, cake balls, cake jars, tray bakes, no-bake cakes, and seriously impressive celebration cakes.

Before you get into the deep end of a several-tiered extravaganza, Lauren and Rachel take you through basic baking techniques, like cupcake icing techniques, tempering chocolate, applying buttercream, and making a perfect chocolate ganache.

They also start by saying that not every cake you make will be perfect, and that failure, or a soggy bottom, or a sunken middle is all part of the process.

The book has recipes for crowd-pleasing classics like a Victoria sponge, chocolate fudge cake, and carrot cake, with some new favourites like red velvet cake and Nutella… well, Nutella everything.

You will be seriously hungry flicking through this book, and although it's nearly impossible to pick what we’re most excited to bake first, it's probably between the dark chocolate and sea salt ganache cookie sandwiches, or the cinnamon roll scones (before we attempt those incredible showstoppers, of course).
