  • It looks and sounds good. Thank you for the idea. Also, try to cook salmon in a bit fiddly way by putting into freezer for couple of hours, dust with flour lightly and fry in hot mixture of oil and butter until browns. So, it is nice and crispy outside, but rare and slightly cold inside. Please use unsalted butter and the best you can afford. Salted butter and cheap supermarket butter contain too much water. Instead of melting with nuttty colour, it boils and reacts with oil like water, splattering everywhere. Wild salmon can stand easily to any read, but if it is farmed salmon, I would say something creamy and buttery, Malborough from New Zealand or Sancerre. Picture one is good.
